Mom's Famous Buttermilk Pancakes

Last weekend Candace and I both had the same idea for breakfast on our lazy Sunday morning we were enjoying with our families. We broke out our tried and true recipe for Pancakes/Waffles that was passed down to us from our Mom.

Growing up we didn't have very many traditions in our home~it was too crazy trying to raise 6 kids and keep your sanity. I still don't know how our dear Mother did it all. One tradition was that every Saturday morning while us kids were huddled around the TV for cartoons, our parents were whipping up Buttermilk Pancakes to sustain us through the endless hours of yard work that were soon to follow.

I tend to stick with the tried and true since I get nervous about trying new recipes. Candace on the other hand has tried several other recipes but none seem to measure up to the original that we were raised on. It can be used for making waffles too!

Mom's Famous Buttermilk Pancakes
3 eggs
3 3/4 cup buttermilk
3 3/4 cup flour
6 Tablespoons soft shortening or oil
3 teaspoons sugar
3 teaspoons baking powder
1 1/2 teaspoons soda
1 1/2 teaspoons salt
Optional: add 1 1/2 cups drained fresh or frozen blueberries to batter~fold in carefully. Top with strawberries & whip cream.

Thoroughly mix all ingredients, adding in extra buttermilk to achieve desired consistency. Cook....Devour.:)

Now that we are raised and have families of our own, it is a thrill to hear our different siblings say "I made Mom's pancakes this morning.", or when our brothers come to town their (and their kids) first request is that Mom makes pancakes the next morning. I will admit that no matter how well I make them, they never taste quite as good as when Mom does!

Pink Lemonade Cookies

Normally I'm not the biggest fan of boxed cookie mix or frosting
but Pillsbury Pink Lemonade Cookie Mix and Frosting has made me a convert.
Pink Lemonade Cookie MixCreamy Supreme® Pink Lemonade Frosting
At church on Sunday my good friend Diane brought these tasty treats to all the little kids~good thing I was substitute teaching and was at the right place at the right time to happily sample these treats.
They were so yummy I immediately texted her after church begging for her recipe.
Her reply: "I was afraid this would happen. LOL. It is a box mix from Target. It is back in the Easter section. It is called pink lemonade. The frosting is right by it. LOL. Good stuff."

Yes, I did laugh out loud at that one.
First thing Monday morning I was in Target snatching up the remaining 2 boxes and 1 box of frosting.
Come on Pillsbury, how can you hook me and then say I only get it this time of year? They are so easy to make and a perfect treat to make with your kids. There is another sinfully delicious recipe for pink lemonade cream cheese bars on the box that my daughter and I will just have to try tomorrow when the cookies are all gone. And yes, diets don't count during spring break.

Here though is my brilliant tip~I wish I could claim it as my own but I picked it up from another amazing friend at a "favorite things" party~have you heard of them or gone to one? (SO FUN!)

Instead of trying to get cling wrap to stick to a plate of cookies and how irritating it is to get at them once they are wrapped up and clung into place...try using a shower cap. Yes, I said shower cap. You can grab them, 3 in a bag for a $1 at the Dollar Store. I'm a believer now!
Happy Wednesday friends!

Sweet Bacon Wrapped Chicken

Okay, you're probably wondering when are we going
to start crafting again?
Well this week my in-laws are in town
and Candace has a house full of sick kids....what's with summer colds?
So with family comes yummy food
and I tried a new recipe last night that I just had to share!

It's was seriously good and easy to make!
I did alter a few things, I partially pre-cooked the bacon.
This helped burn off a lot of the grease
so that when we grilled them they didn't make a huge mess on the grill.
I also salted, peppered and shook a bit of onion & garlic powder
on the chicken before I wrapped them in the bacon.
I was worried that the chili powder would be too hot
but it isn't, in fact next time I think I might add an extra Tablespoon.

Of course anything Paula Deen makes is wonderful...
remember her yummy
our brother told us about!?!
So much for the weight I lost getting ready for summer!
What good stuff have you guys been cooking?

Taste Like Chicken-What's Mike Cooking?

Tonight Candace and I stumbled upon
a most delicious new blog that is definitely worth sharing!
Maybe I watch too much of Food Network
to the point of fantasizing about being a master chef some day
or maybe it's my love of cooking that makes me drawn to
learning more about cooking tools and techniques.
All I know is that I have devoured all the great tips
that this wonderful blog has to offer
and I'm making a list of the kitchen tools I need....

Michael Hart is the man behind the blog
sharing his 30+ years of cooking experience
and love of cooking.
It's a fun read and you'll learn a lot!
His male perspective and wit drew me in!
Make sure to check it out,
I'm excited to see what he does next!

P.S. Donald, thanks for sharing the link!
